Background: After working in the kitchens of various bistros and restaurants, Jeffrey Nguyen, the 21-year-old owner and chef of Le Bon de Cuisine food truck, sought to do something more. Lacking the capital to open his own restaurant, he invested his savings instead in a beat-up, yet functional, food truck. Combining classical French culinary techniques with traditional Vietnamese flavors, Le Bon de Cuisine was born. Using fresh, local ingredients, Jeffrey emphasizes the quality and integrity of the food.

The Food: Le Bon’s succulent and savory pork can be eaten in a variety of ways. We enjoyed the pork belly sandwich, served on a fresh baguette with pickled vegetables, although the miniature sliderlike pork buns were a close second.
