Poke (poh-kay) is a raw fish salad originating from Hawaii. The original version contains ahi tuna tossed in soy sauce, sweet onions and seaweed, but it can be made with salmon, octopus, shrimp and any other sashimi-grade cut of fish. Commonly served alone or on top of salad or a bowl of rice, the poke craze has definitely hopped over to the mainland. Here are some newcomers who have joined the usual suspects.
