Chef Jonah Rhodehamel took a different approach to our annual Whole Hog dinners last month with a focused menu of Italian farmhouse-based dishes. During normal times, the Oliveto menu includes a few such items, but in the main our dishes are more elaborate, with multiple, beautiful components, or made with ingredients which, though simple, can be expensive (such as aged beef or sustainably caught fish). Our dishes, though based in an Italian tradition in technique and aesthetic, can be far from countrified.

But for the Pig Dinners this year we served up dishes using the basic ingredients of poor families’ kitchens such as pork skin and trim, offal and lesser cuts, heirloom beans, polenta and whole grains, leftover bread, and so on. We were so pleased with the deliciousness of the meals and with the feeling of warmth, well-being and satiety that such dishes engendered, that we thought we’d find a way to serve such cooking more regularly.

So Chef Jonah came up with a plan to extend our offerings of comfort-bringing foods by adding to our basic aesthetic: in addition to our regular menu every Sunday, beginning March 18, we will offer a prix fixe farmhouse supper for “groups” of one to twelve for $40/per person. The dishes will emanate from the rural homes of Italy’s various regions, using the region’s local produce and animals, cheeses, olive oil, and so forth. A regional wine will be offered to accompany the meal at $40/per bottle.

Tuscan Farm-Style Rabbit Supper:


Chef Jonah has long wanted to do a dinner with these beautiful Jones’ Farm rabbits as the center of the meal; the family-style format gives him the opportunity.

We’ll start with an assortment of wood-grill-toasted crostini and local Cannellini beans with pancetta, rosemary, and Tuscan varietal-olive oil.

Rabbits will be roasted, then braised, yielding:

Rabbit sugo to be served with hand-cut long, narrow pappardelle

then

Braised rabbit in bianco to be accompanied by early-spring vegetable contorni

Dessert: Tuscan bread pudding with pine nuts, Marsala, and lemon zest

Prix fixe $40.

For groups of one to twelve. Whole table must order prix fixe menu. A regional wine will accompany the meal at $40/per bottle.
