What are mountain cheeses? Well, you’ve likely tasted many of them and you may even count some as favorites: Gruyere, Comte, Emmenthal, and Beaufort, to name a few. These dense, meaty cheeses sustained many a farmer through long, tough Alpine winters. Neal’s Yard Dairy veteran Chris George will take us through a tasting of classic mountain cheese and explain the centuries-old, but quickly disappearing cultural practices behind them.More Info
