Join ICC on Wednesday nights in April for an exciting array of wine classes. All classes are led by the same Master Sommeliers who teach our Intensive Sommelier Training program.


Can You Taste Points?

April 2, 2014                        6:00-9:00pm                        $295

If you’ve ever wondered how the wine critics and magazines score wines, this class is for you.  We’ll explain how Wine Spectator, The Wine Advocate and other publications taste on the 100-point scale.  Then you’ll take part in a blind tasting of wines that were praised and wines that were scorned by the critics and see if you agree.  You might be surprised by your palate in this comparative tasting, and learn to trust your own tastebuds.


The Age-Old Dilemma—Should You Age Wine?

Many people think they should be aging wine, but do you really like the qualities that aging will express in a wine? In this class, you will taste the difference in a young and old Cabernet Sauvignon and other age-worthy varietals.  Discover the risks and rewards of aging a bottle, and the potential value in aging wine in your cellar.


Cheese-and-Wine Pairing

Pair the right wine with the right cheese and you have a sense of what heaven must be like. But pairing wines and cheeses properly can be surprisingly difficult. In this class, you’ll learn why certain duos are indeed made for one another, and why others will leave you wishing for temporary amnesia. Let a Master Sommelier introduce you to new and interesting pairings, certain to make your next party delectable.


Chardonnays from Around the Globe

In California, Chardonnay rules the white-wine world.  But the Chardonnay wine we know here represents only one expression of the varietal. From Burgundy in France to the Margaret River in Australia, winemakers have found unique ways to make this grape their own.  In this class, guided by a Master Sommelier, you will learn (and taste) why this extraordinary grape is cherished by winemakers around the globe.


Somm Insider Secrets

Learn the tips and secrets Master Sommeliers use every time they swirl, sniff and sip a glass of wine.  You, too, can discover how to identify wine in a blind tasting and impress your friends.  You’ll practice the deductive tasting technique and learn the grid developed by the Court of Master Sommeliers.
