Inspired by Chinese and Japanese tea ceremonies, here’s my tribute to an Indian tea ceremony. All South Asians enjoy a cup of tea with some accompanying snacks every afternoon between 4 to 6 PM. Dinner is then served between 7:30 to as late as 10 PM.
South Asians enjoy a strong cup of black tea (chai), some like it with milk, some without; there are many variations of masala tea as well. The method of how a cup of tea is prepared also varies from region to region. You’ll receive an intro and lesson in tea making in this class. You’ll learn to make plain and masala chai, as well as ginger liqueur tea.
Apart from tea, you’ll learn to make two different types of chutneys – tamarind and mint chutney. We’ll be making Chicken Keema Samosas, Potato Samosas, Paniyarams, and Peaju. We’ll be all eating the tea, snacks, and dipping chutneys as we make them right off the stove!
