Description

Learn the art of working with mousses and creams, the foundations for an assortment of elegant desserts. In this hands-on class, you'll make four creams and mousses and use them to create three great summer desserts.

Details & Schedule
Starting with the basics, you'll work in teams to make crème anglaise, Bavarian cream, dark chocolate mousse, and a fruit mousse. You'll then move into cake construction. Our expert pastry chef-instructors will demonstrate the techniques to make a French biscuit and how to use it to assemble small cakes. They'll also demonstrate several finishing techniques and garnishes to give your creations a special touch, from apricot glazes and whipped cream to candied fruits, chocolate shavings, marzipan decorations, and gold leaf adornments.

You'll then put all of the elements together to build and finish your own fraisier and charlotte cakes—two classics from the French patissiere's canon. They'll be yours to take home, along with the secrets that will allow you to create many new desserts from scratch in your home kitchen for years to come.
