Description
The husband and wife team of Niels and Bimmer Udsen established Castoro Cellars with the goal of producing world-class wines from Paso Robles-appellation grapes. Each vintage becomes a new challenge allowing them to creatively experiment using ongoing research to ensure they meet their goal.Now with over two dozen years of experience, the two have gone from making a few barrels of wine for family and friends in a rented corner of someone else’s winery to developing a custom-crush operation and a 60,000-case operation for Castoro Cellars. The winery currently has over 750 acres of Estate vineyards, 320 of which are certified organic by CCOF.
With so many acres being certified organic the Udsen’s have stayed true to the practice of sustainability sourcing 15% of their fruit from local farmers, whom they have been doing business with for the two decades of their existence.
Winning awards since 2006, Castoro Cellars is still considered an up-and-coming operation, but with the quality they produce year after year their name will be circulated quickly in the wine world!
On Friday May 4th, Sous Chef Madison Montoto will pair 5 appetizer sized bites with Ventana Vineyard's selection of amazing wines!
Dan Nieckarz will be playing latin and classic jazz as we serve 5 outstanding wines with 5 phenomenal appetizers. All for $25 exclusive of Tax & Gratuity. This should be a really great time.
