Description

2012 marks the 100th anniversary of the Wente family bringing Chardonnay cuttings to California. Today, the Wente clone of Chardonnay is the most widely planted in California. In commemoration of this special centennial of Chardonnay, Matt Greco, Executive Chef at The Restaurant at Wente Vineyards, will host a five course tasting menu at the demo kitchen in Williams-Sonoma. Five different Chardonnays from Wente Family Estates will be paired by Fifth Generation Winemaker Karl Wente, showing the versatility of this great wine varietal!

Starter
Pork terrine with fennel fig marmalade, walnut butter and grill brioche
Wente Vineyards Brut

First Course
Dungeness crab with squash aioli, lemon, pickled squash, crispy avocado, and cilantro
Wente Vineyards Riva Ranch Chardonnay

Second Course
Poached local opah with pumpkin, chanterelle, green apple, and almond lemongrass broth
Wente Vineyards Eric’s Chardonnay

Third Course
Baked rabbit with grape must, pinenut, rabbit bacon, onion, and swiss chard

Dessert
Key lime pie with toasted coconut marshmallow
